Doing Whole 30 can be hard. Dang hard. Of course I cannot do it all of the time, so eating better sometimes is better than eating poorly all the time, right?
This morning I was going to take Jace to McDonald’s for a sausage burrito and biscuits and gravy. I was craving it like no other, but I had no time to run over before the vet would be getting to our house. Only then did I remember that I threw a sweet potato in the oven last night for such a time as this.
This is really easy to make. If you aren’t a cook, you totally got this. Promise!
- 1 cooked sweet potato (Cut a slit in one side of the potato, pour 1 tbsp of olive oil over it, a couple of shakes of salt and wrap in aluminum foil and bake in the oven at 400 for 1 hour.)
- 1 tablespoon of almond butter
- A handful of blueberries
In the morning, your potato will likely be like mine and cold where you have stored it in the refrigerator. Put the potato on a microwavable plate and open up with a fork. Put the almond butter on top and microwave for 1 minute. Mix the sweet potato and almond butter together. Top with blueberries and microwave for another minute and a half. Be sure to let it cool a couple of minutes before eating – it will be hot! Enjoy!
